Partial day requests - "Night/Evening" option

My organization has employees whose work days start in the afternoon and end in the evening/night.  Currently, for partial day requests, users may request "Morning Only," and "Afternoon Only" options.  Is it possible to add an "Evening/Night Only" option?  Thank you.
